I remember when I first tasted this recipe while working for Fancy Girl Catering company in NY. We prepared lunch each week for Bumble and Bumble students and decided we wanted to highlight Cuban Food the entire week. I was so impressed by our head chef Margaret and Purva the pastry chef how they create their own unique spins on recipes. Working with this team reinvigorated my love for food through the difficult transition of divorce after being married for 11 years. Utilizing the recipe from Epicurious which is a great site to get recipes, I created my own version of a mojito sauce to bump up the flavors in my chicken for the tacos. Enjoy!
