In Barbados we absolutely love salted cod fish. This fish is typically prepared as a stew and served with rice or cou-cou. We also make delicious fish cake fritter with salted Cod Fish. It is a staple in every grandmother’s kitchen. Salted Cod dates to historical times before Refrigeration was around as a way of preserving me for later usage. Before preparing any dish with this fish, one must soak it for a while and possibly boil it in order to get most of the saltiness out, but you want to leave just a slight hint to flavor the dish. This stew is my spin on the traditional Bajan Cod Fish gravy, with its melody of salty, savory and a slight sweetness from the tomatoes and of course a kick of spice.
