I have a few cooking shows that I truly enjoy watching as it inspires me to try new recipes. One night as I was watching a Master Chef episode on Fox, Korean Chef Edward Lee challenged the home cooks to make their own take of Asian dish Bibimbap. It immediately drew my interest as I absolutely love different types of Asian cuisines. What stood to me in this dish was the concept of the crunchy rice which reminded me of what people call “bun bun” in Barbados when you eat the rice on the bottom of the pot.
This dish is also packed with tons of phyto-nutrients from the rainbow color of vegetables I decided I would try my hand at creating my own version of this dish. Enjoy!
