I love the taste of kidney beans and rice and the creamy profile coconut milk bring to this dish. I still wanted my rice to have a lightness to it and adding the stock aids in this process. Adding the vegetables also compliments the dish while enhancing the nutritional value. If you can’t find kale, spinach or another rustic leafy green will do. Eat up and Enjoy.
