In the middle to late 1800’s Chinese/Asian laborers were contracted to the Caribbean to work on the sugar plantations in three main locations, Jamaica, Guyana and Trinidad. During that time the Chinese/Asians also migrated to Cuba and other Caribbean islands as a result of the Chinese Exclusion Act in 1886. This migration bought with it an array of Asian flavors, techniques and dishes that influenced the Caribbean cuisine we enjoy today. The word Bulgogi means fire meat in which Asians marinate meat to be cooked using traditional grilling techniques. This marinade is usually associated to Korean street food however I added my own Island flavors to create this amazing stir fry dish that I believe anyone can make and enjoy.
